Did you know there’s a vintage Cava? Why is that significant?
Cava is made the same way as the infamous Champagne, only with indigenous Spanish grape varietals. Vintage Champagne and Cava are only produced during exceptional years and in small quantities.
Its bright raspberry pink color is asking to be Instagrammed, and we couldn’t resist. MATA smells like a hibiscus tea brewed with red apples and red currant. The nice mineral note gives away its traditional sparkling nature.
As we took the first sip, we felt a creamy sensation created by those tiny bubbles dancing on the cheeks and tongue. It tasted like green apple, strawberry, and gooseberry, yet the aftertaste was filled with fresh raspberries.
It felt crisp and refreshing and a perfect sparkling for Sunday brunch that can go equally well with a Greek omelet, sunny-side-up, or eggs Benedict with smoked salmon and rich bechamel sauce.
