This bottle came from the Saint-Amour appellation in the Beaujolais region of France. Generally speaking, Saint-Amour AOC produces wines of two different styles, thanks to its various soils, including granite, schist, and clay. First, the easy-drinking wine tends to have the aromas of iris or violet and sometimes raspberry. The second is more powerful and complex, characterized by the Kirsch (sour cherry liqueur) and spice aromas.

Pairing this Gamay with duck confit would be our perfect choice! We also think of roasted goose with a cranberry sauce if we drink it during colder months. However, the best pairing to our taste would be a grilled or poached wild Alaskan salmon with caraway seeds and pink pepper.
