We tasted it right after the release. There's a winemaker's signature stroke connecting all three vintages and there are noticeable differences between them. It's great when winemaker lets vintage show its character instead of creating uniform wine every year.

2015 RMS sparkling is the third vintage from Roco Winery of Willamette Valley of Oregon. It keeps getting better and better every year.
We tasted it right after the release. There's a common Rollin (winemaker) stroke between all three vintages and there are noticeable differences between them. It's great when winemaker lets vintage show its character instead of creating uniform wine every year.
2015 RMS greets with the nose of white flower, brioche, apple, minerality, and a hint of honey-like aromas.
On the palate, it's dry and youthful with yellow apple and minerality. There's a great balance between refreshing acidity and sweetness showing off dosage skills of the winemaker.
Dosage is the liqueur which is added just after disgorging. It consists of a mixture of reserve wine and very pure cane sugar and determines the type and style of sparkling wine. Disgorging is the process of removing yeast solids after the fermentation in the bottle is complete. During fermentation, bottles are tilted nose down to allow solids to accumulate close to the cap. During the disgorging process, the nose of the bottle is flash frozen, the temporary beer-like cap removed, naturally frozen liquid along with solids shoots out and dosage added to compensate the lost volume. It's up to the winemaker to decide how sweet or dry the final product is going to be.
We got an impression that 2015 is just a tiny bit sweeter than last year's RMS resulting in even more finessed sparkling. It could be because of riper fruit or art of dosage by Rolin.
