Cranberry Sauce With Wine

Cranberry sauce is usually associated with two holidays – Thanksgiving and Christmas. However, when we made it the first time, we realized it could be a perfect condiment for many dishes throughout a year. 

Since we are very passionate about food and wine pairing, we often focus on wine-friendly recipes. Making cranberry sauce with wine was another wine-friendly idea that popped up when we were not in a mood to finish the bottle of rose saved from another night. We already had an experience of making a regular cranberry sauce and pairing it with wine. We wanted to bring the sauce to the next level by adding another layer of flavors. Adding wine to the recipe usually does the trick!

The plain cranberry sauce calls for three simple ingredients: cranberries, sugar, and water. If we made this sauce, we would call it a jam through. 

We love spices, and therefore our cranberry sauce must have some. 

You don’t have to use all of them. Using just two might work well, too. The first sauce we made was with nutmeg only. 

Liquid ingredients may also vary. We used water, tangerine juice, and wine. You can omit the wine and replace it with water or tangerine juice. You may replace tangerine juice with orange juice if you don’t have tangerines. You might also replace water with one of the citrus juices mentioned above. It all depends on what you prefer.

If you want to make your sauce very thick, use 1/4 cup of water instead of 1/2 cup.

1/4 of a teaspoon of ground cinnamon can undoubtedly replace the cinnamon stick. The flavor will significantly depend on the quality of the cinnamon product you have. 

As for wine, we only experimented with rose so far, but white wine would go well also, in our opinion. 

  • 4 1/2 cups of fresh cranberries
  • 1/2 cup of sugar
  • 1/4 cup of rose wine
  • 1/4 cup of tangerine juice
  • 1/2 cup of water
  • 1/4 teaspoon salt
  • a dash of nutmeg
  • a dash of ground cloves
  • 1/4 teaspoon of ground cardamom
  • 1/4 teaspoon allspice
  • One stick of cinnamon

Instructions

  1. Bring water and cranberries to boil and cook on high heat for about 10 minutes. Berries will start bursting up. And that is exactly what we need. Crush berries that didn’t burst. 
  2. Add tangerine juice, wine, and cinnamon stick. Bring it back to a boiling state, and lower the heat to medium. 
  3. Add spices, salt, and sugar. Cook the sauce for about 20 minutes.
  4. Cool it down before serving. 

We love our cranberry sauce with wine! It is a very wine and meat friendly sauce. Why not try it with a roasted duck, chicken, and beef. Pair it with bright and tannic wines full of red berry flavors such as Castello di Verduno “Basadone” Pelaverga
