You probably have seen lots of press praising Caymus, and so did we. Finally, “folding under peer pressure,” we accidentally bumped into Caymus Cabernet Sauvignon 2017 while picking a wine to pair with Valentine’s dinner.
Besides being a worthy wine for the occasion, it also satisfied our oenologic curiosity. We had other great Cabs before, and we wanted to find out what makes it unique, and are we gonna join the cult after tasting it.

Caymus Cabernet Sauvignon 2017 Tasting Notes
2017 Caymus has a vibrant deep ruby color. Sweet vanilla was a dominant aroma when the bottle was just open, and it took a little time to reveal ripe black currant, creamy cocoa, and tobacco.
It’s fruit-forward wine and, while dry overall, it tastes off-dry without being sweet. It pronounces loud and clear, I’m California Cab and don’t even think of me as Bordeaux. Caymus fruity nature comes through with flavors of cherry, ripe blackberries, cassis, and dark chocolate.
Thanks to sensible well-incorporated tannin and medium acidity, this reach wine doesn’t overwhelm the palate.
It paired equally well with filet mignon and chocolate mousse.
Conclusion
After we finished the bottle, we both thought it would be an exciting experiment to age 2017 Caymus, but then what would it gain to make it a better wine.
It’s already well-rounded, balanced wine with seducing aromas and flavors and ready to be enjoyed now. Why wait?
