The green paste is one of the versatile ingredients in both vegetarian and carnivore cuisine.
You can make it to improve the taste of a particular dish or add it to a sauce. Also, it is a perfect recipe for those who purchase green herbs regularly but do not always use them before they get spoiled in a refrigerator.

Green Paste Ingredients

The essential green paste ingredients are:

  • fresh green herbs such as parsley, cilantro, dill
  • fresh garlic
  • olive oil
  • salt

If you want to add more layers of flavors, try adding mint, thyme, rosemary. Salt and garlic preserve this mixture for up to three days in a refrigerator, but they are not the only spices you can use. Try adding crushed black pepper or even a mix of spices.

Adjusting the ingredients to your taste will help you create a staple recipe for your kitchen. We usually develop flavors according to the wine we will taste with the dish.

How to Use Green Paste in Dishes

There are so many ideas on incorporating green paste into different dishes!
We started with poached fish and used green paste as a topping to replace the sauce.
Try mixing the green paste with goat cheese and let it stand for about an hour. The mixture will make a flavorful spread.
I will also pair well with chicken or lamb barbeque.
The green paste mixed with olive oil will add flavor to a fresh green salad or potato salad.

Tools and Techniques

You will need a kitchen processor to make this paste. We also think it is possible to use a powerful blender like Vitamix, if you are making it for the sauce. We prefer to see small chunks of herbs in the paste, so we stick to pulse mode on our processor.
You can also finely chop up herbs using a sharp knife.

Ingredients
2 cups of fresh parsley, coarsely chopped
2 cups of cilantro, coarsely chopped
2 cloves of garlic
1/3 tsp salt
1 tsp of fresh thyme leaves
1/2 tsp of fresh rosemary leaves
1/4 cup olive oil
1 tbsp lemon juice

Instructions
Add all greens and garlic to a kitchen processor bowl and pulse it up several times until all herbs are finely chopped. Add olive oil and lemon juice and mix it with herbs and garlic, add salt, adjusting the amount to your taste. Pulse it just enough to mix everything well.
